Spiced Oatmeal Cookies
Ingredients:
2 Pkgs. HMR Multigrain Cereal
2 Pkgs. Vanilla HMR 500
2 Tbs. Butterscotch Sugar Free Instant Pudding
1/2 tsp. Cinnamon
1/4 tsp. Nutmeg
1/4 tsp. Allspice
1/2 tsp. Coconut Extract
1 C Sugar Free Ginger Ale
Directions:
Mix dry ingredients then stir in Ginger Ale. Let stand 5 minutes. Mixture may seem runny but will thicken on standing. Drop by rounded Tbs onto a PAM-sprayed baking sheet, spread cookie slightly with back of spoon. Bake at 350 degrees for 14-16 minutes. Let cool on baking sheet. Store in a tightly closed container.
Makes approx 6-7 cookies.
I had these as my dinner last night. They are super filling. I could have easily saved half the cookies for breakfast this morning.
